Included in the mix of tomatoes are Beefsteak, Roma and Napoli.
After three batches of Salsa were cooked and put up we have 27 pints of this favorite sauce to use up over the next twelve months. They sit in a cupboard in the garage, and it is a pleasure to go out there to see the fruit of our labor on the shelves!
Pickles sit along side the Salsa and are used right along through the year as well.
The recipe for the Salsa was given to me by my walking buddy. She told me it's the best and I do agree!
Salsa
10 cups chopped tomatoes
3 Cups red pepper, 3 Cups green pepper, 4 Cups white onion, 1 cup vinegar(5%acid), 4 large jalapeno peppers, 3 t salt, 1/2 t pepper, 3 t cumin, 3 t chili pepper, 1/4 cup fresh cilantro, 4 t minced garlic, and 12 oz. tomato paste.
Combine in pot and heat to boil. Simmer 10 minutes. Put in pint jars with 1/2" space in jars. Hot water bath for 15 min. One batch makes 9 pts. or 4 1/2 qts.

Some of you are wondering how 27 pints of Salsa add up to 3 bushels of tomatoes. I also cooked up several large pots of tomato sauce and froze it! I didn't count up all the containers as I did them..but believe me we have enough tomato produce to last a long time!!

That's a lot of tomatoes! Wow! I know you'll love it all winter, especially all that sauce for lasagna and spaghetti.
So Willow was a few weeks early on her trip our we might have been able to try a jar of your salsa :0(

My mouth is watering! Hot sauce (that's what we call it in Texas) and chips...my favorite thing in the world! Your recipe is almost identical to mine except for the tomato paste. It all looks so pretty in your cupboard, waiting to be enjoyed.

I am soooooooo jealous ! You have time to do your canning ! What a bounty of delicious canned produce. Maybe this week the unexpected but very necessary errands into town will not be required and I can preserve the bounty that threatens to rot very soon. Lovely pictures...
Hi, I am going to make this recipe (tomorrow I hope) and I am not sure what you mean by "3 t chili pepper"
Is this dried red chili pepper? chili powder? Or fresh chiles, chopped fine and only a little bit?
