We have pounds of zucchini growing from our two zucchini plants. They grow hidden underneath the leaves and large stems...until one day you find baseball bat sized zucchini and must decide what to do with them. Of course everyone wants to "catch" the zucchini before they are so large but it seldom happens! :) There are several options for uses including: bake something, feed to the goats, feed to the chickens, offer to our friends and family. This week I chose to make zucchini bread, or at least I thought that is what I was doing. This bread turns out to be better than cake..no kidding!! It is moist and delicious!

The recipe is taken from

My son and his wife grew zucchinis for the first time this year. Just a small plant. He brought a couple over and just likes to saute them with a little olive oil seasoning and garlic. Yummy! He barbecues them too...
oops! forgot to say that that bread that looks like cake looks very moist and yummy...
The nice thing about huge zucchini is that you have enough to bake a cake, a few loafs of bread AND feed the goats and chickens ! looks yummy, KathyB.
Thank you for your recent visit to Quill Cottage. I stopped over only to find one of my favorite treats featured here! I love zucchini bread and my mom makes the best ever! What a darling blog you have here. I am off to read some more.
I love to grow zucchini. It's got to be one the most easy veggie to grow.
It is funny how you can go look for the zucchini and not find anything but the next day there is a land of the giant one. Why does that happen? How does it happen?
Hugs,
Joanne
Hi, Miss Sandy here. I hope you don't mind two stop overs in two days! I am trying to respond to some earlier comments and you asked about the music playing on my blog. My play list is located at the very bottom of my blog if you ever want to find out what is playing or change to another selection while you are visiting. Right now I have a very short play list but here are the titles and who they are by:
Storytime by Danny Elfman
Ice Dance by Danny Elfman
Somewhere In Time by John Tesh
Neom's Egg by Thomas Newman
At the time of your visit, I think the top one playing was Storytime.
I'd love to add your lovely site to my blog roll if I may.
Blessings,
Miss Sandy
