Soup is one of my specialties. I make it all the time and often make up the recipe as I go. There are certain flavors, textures and seasonings that go together which are fool proof. I think this one turned out very nice, judging from my husbands reaction. I understand that it can be eaten cold but that will never happen in this house! :))
This recipe is my variation of a time worn recipe.
1 bunch beets (3)
1 c. fresh tomatoes (or canned)
1 large carrot
1 or 2 bay leaf
1 small onion diced
4 c. water(enough to cover the beef)
1/2 lb. breast of beef brisket
1 tbsp. lemon juice or vinegar
1 T. sugar
1/4 tsp. salt
Pepper to taste
Pepper to taste
Prepare the brisket by browning it in the over at 400 degrees for 20 min.
Place the browned meat, uncut, in a crock-pot that has enough water, heated, to cover the meat. Let simmer on high for 3 hours. Add pared and diced beats, 1 large diced carrot, onion, bay leaf, tomatoes, salt, pepper or seasoning to your taste.
Simmer for a couple more hours. Take the meat out and cut up into bite size pieces. Put the beef back in the soup. Ladel into soup bowls and add a dab of sour cream. This is a rich soup and full of flavor! Enjoy!!

I grew up on Borsch and there was a time when I was little that I really did not like it. From my teens on I have loved it. Our family doesn't use beets at all in our recipe. Yours looks yummy! And about the weather you cooked it in I'm known for making soup in hot weather. I always get a comment or two, or three about it...
Three beets are plenty and they make the broth such a beautiful color! I remember having beef soup, much like this, without the beets and often.
I like beets but The Professor does not.

Yum. I've had that soup at a friend's house. The beets are my favorite part.

mmm...this looks good! Borsch is such a pretty soup. I used to not like beets when I was a kid, but love them now as an adult. I'd rather have fresh beets than candy--LOL! I've not actually made borsch before though, oddly enough. I don't eat meat, so I'd have to make a veggie variant. I love making soup...the slicing & dicing, then the slow simmer. I make soups mostly in the fall/winter, but I've been making some this summer too on lower-temp days. I'm feeling hungry now--LOL! Happy weekend, my friend ((HUGS))
Yummy! I'm going to have to try that one. I'm with you though and wouldn't want it cold. I do like fruit soups that are cold but that's it.

Yummy! That looks delicous! Its funny that saw this post today as I already planned on making Chicken Veggie gumbo soup for dinner tonight. I can eat soup any time of the year, hot or cold.
